So good…I made them again today! Here’s the recipe:
Chocolate Chip Cupcakes
- 1 1/2 cups unsalted butter, room temp (I used salted and didn’t put any extra salt)
- 1 1/2 cups light brown sugar, packed
- 4 large eggs
- 2 2/3 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/4 tsp salt
- 1 tbsp cinnamon
- 1 cup milk
- 2 tsp vanilla extract
- 1 cup chocolate chips
Cream the butter and sugar together on medium speed for about 3 minutes until light and fluffy. Add the eggs one at a time, mixing well after each addition. Add the vanilla and mix.
In a separate bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon.
Add 1/3 of the flour mixture to the butter mix and beat until combined. Add half of the milk and mix. Add another third of the flour, followed by the remaining milk and then the last third of flour. Be sure to mix well after every addition.
Fold in the chocolate chips.
Spoon batter into lined cupcake tins. Bake at 350 degrees for 18-20 minutes or until the cake springs back when gently touched in the middle.
Cookie Dough Frosting
- 1 1/2 cups unsalted butter, room temp.
- 3/4 cup light brown sugar, packed
- 3 1/2 cups powdered sugar
- 1 cup all-purpose flour
- 3/4 tsp salt
- 2 tsp cinnamon
- 3 tbsp milk
- 2 1/2 tsp vanilla extract
Beat the butter and brown sugar together until light and fluffy. Mix in the powdered sugar and beat until smooth.
Beat in the flour, salt, and cinnamon. Beat in milk and vanilla until smooth.
Pipe frosting on each cupcake using a large star tip and finish with mini chocolate chips.
